Spring has sprung and I am so happy. I know we will still get some winter weather but just on the horizon is warmth and sunshine. We have some flowers blooming already and they are a breath of fresh air. Momma Said, “Every day is a good day but tomorrow is always a chance to have a better one.”
You always have a chance in life to make things better, if not for yourself maybe someone else. If it is for someone else and what you do is unexpected it is even better. Hold open a door for a stranger, help your neighbor with yard work or just say hello to a passerby.
I get frustrated sometimes when I do that and there is no response, but people today are not the same as when I was growing up. If you spoke to someone, they answered, but people are so introverted today that they probably think I am a nut job speaking to a total stranger. Momma Said, “Manners never go out of style they are just not utilized anymore.”
We were raised with the philosophy that you are not better than anyone else, everyone is equal. I know we didn’t have all the best things but we had each other. I couldn’t count the times I got in fights with the neighborhood boys to protect my little brother. It was short and sweet but they always let him join in afterwards. Momma Said, “Family is number one and always should be.”
Spinach and Feta Triangles
Ingredients
- 6 medium sheets of Phillo Pastry
- 300g/10 oz. boiled and squeezed or fresh spinach
- 1/2 cup feta cheese, crumbled
- 2 cloves minced garlic
- 1/2 teaspoon dried dill
- 1/2 teaspoon ground black pepper
- half cup melted butter
- 1 tablespoon chopped parsley for garnish
DIRECTIONS
Add the spinach, feta, dill, garlic, and pepper to a bowl. Mix until well combined.
Lay 6 sheets of phyllo dough out (10 inches by 13 inches stacked together) and cut them into 3 equal sections.
Next, lay one section out and brush some melted butter over it. Lay another section over it and brush more butter.
Scoop up a heaped tablespoon of the mixture and place it on the bottom of the strip of dough. Fold it over so a triangle forms.
Continue folding back and forth into triangles until you reach the end of the strip. Brush some more butter over the top.
Repeat the above process for the remaining strips and mixture.
Place the triangles into a 375F preheated oven for about 20-minutes until browned.
